STICKY JAPANESE BBQ CHICKEN LEGS

Chicken legs are one of those ingredients I always love having in the kitchen. They’re affordable, easy to cook, and can take on just about any flavor you’re craving. They’re especially perfect for a weeknight dinner because you can marinate them the night before, pop them into the air fryer the next day, and have dinner ready with very little hands-on work.

For this recipe, I wanted something different from the usual chicken dinner - something sweet, savory, spicy, and packed with flavor. Japanese-style barbecue sauce creates the sticky base, while ginger, garlic, lemongrass, soy sauce, citrus, and a little heat give the chicken an extra kick. It’s the perfect excuse to have an Asian-inspired night at home.

The air fryer gives the chicken legs crispy, browned skin while keeping the meat tender and juicy inside. Brushing them with extra barbecue sauce near the end creates that glossy, caramelized finish that makes you want to grab one straight from the tray.

Serve them with egg fried rice and vegetables for an easy dinner that feels anything but ordinary. Just marinate, air-fry, baste, and enjoy - weeknight cooking doesn’t have to be boring.  ♥

Sticky Japanese BBQ Chicken Legs

Prep Time: 10 minutes | Marinate/Cook Time: 75 minutes | Total Time: 85 minutes | Servings: 4

Ingredients

  • 8 skin-on chicken legs
  • 1 tablespoon red wine vinegar
  • 2 tablespoons Frank’s RedHot Wings Sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon mayonnaise
  • 3 teaspoons lemongrass paste
  • ½ cup Japanese-style barbecue sauce, plus more for basting
  • 1 teaspoon Colman’s mustard
  • Juice of ½ lemon
  • Juice of ½ lime
  • 2 garlic cloves, finely grated with a microplane
  • 1 tablespoon fresh ginger, finely grated with a microplane
  • 2 teaspoons cayenne pepper, or to taste
  • Olive oil, as needed
  • Salt and freshly ground black pepper, to taste
  • Nonstick cooking spray, as needed
  • Lemon wedges, for finishing

Directions

  1. Prepare the chicken legs by trimming away any excess skin or fat, if needed. Pull the skin neatly up and over each leg.
  2. Place the prepared chicken legs in a large resealable plastic bag.
  3. Add the olive oil, red wine vinegar, hot sauce, soy sauce, mayonnaise, lemongrass paste, Japanese-style barbecue sauce, mustard, lemon juice, lime juice, garlic, ginger, cayenne pepper, salt, and black pepper.
  4. Seal the bag and massage the marinade over the chicken until every leg is evenly coated. Refrigerate and marinate for at least 30 minutes—the longer, the better.
  5. Line the air-fryer tray with foil and coat it with nonstick cooking spray. Preheat the air fryer to 425°F.
  6. Arrange the chicken legs evenly on the prepared tray, leaving space between each one. Spoon some of the marinade from the bag over the chicken, then discard the remaining marinade.
  7. Air-fry for 30 minutes.
  8. Brush the chicken generously with additional Japanese-style barbecue sauce. Continue air-frying for another 15 minutes, or until the chicken is browned, crispy, and cooked through. The internal temperature should reach at least 165°F.
  9. Transfer the chicken legs to a serving platter and finish with a fresh squeeze of lemon juice.
  10. Serve hot with egg fried rice and vegetables.

Jesse’s Kitchen Tip

Wait until the final 15 minutes to baste the chicken with additional barbecue sauce. The sauce contains sugar and can burn if added too early. Leave space between each leg so the hot air can circulate and crisp the skin evenly.

Serving Suggestions

♥ Egg fried rice
♥ Steamed or stir-fried vegetables
♥ Sesame cucumber salad
♥ Garlic noodles
♥ Sparkling ginger limeade

Storage

Store leftover chicken legs in an airtight container in the refrigerator for up to 3–4 days.

Reheat the chicken legs in the air fryer at 350°F until warmed through and the skin becomes crisp again. Avoid microwaving when possible, as it can soften the skin.

Variations

♥ Use chicken thighs or wings instead of chicken legs, adjusting the cooking time as needed.
♥ Reduce or omit the cayenne for a milder version.
♥ Add extra hot sauce for an even spicier finish.
♥ Bake in the oven if you don’t have an air fryer. Cook until browned, crisp, and at least 165°F internally.

Baby Friendly?

Suitable for 9+ months

Set aside one chicken leg before preparing the marinade.
Lightly season with olive oil, garlic, ginger, lemongrass, lemon, and lime—no salt or spicy sauces.
Cook thoroughly, then remove the skin, bone, cartilage, and any tough pieces.
Finely shred the tender meat and serve with soft rice and vegetables.

RDH Tip

Sticky barbecue sauce can cling to your teeth, while citrus and vinegar add acidity. Rinse with water after eating and wait 30 minutes before brushing to help protect your enamel.

- A little heat, a lot of flavor, and one very happy dinner table! ♥
