CRISPY ITALIAN CHICKEN CUTLETS


I didn’t grow up eating Italian chicken cutlets. In fact, I had never even had one until I married into my Italian family. My mother-in-law was the first person to make them for me, and I quickly understood why they were such a staple. Crispy, golden, and somehow just as good straight from the fridge the next day—they became one of my favorite things she made.

Of course, every family has their preferences. My mother-in-law likes her cutlets a little thicker, while my husband and I prefer ours pounded thin with plenty of crispy breading in every bite. So, over time, I started making my own version.

I kept everything I loved about the cutlets that introduced me to this Italian classic, but made them the way we love them at home: thin, extra crispy, and seasoned with Parmigiano Reggiano, lemon zest, and a mix of traditional breadcrumbs and panko for the perfect crunch.

Now they’re one of those recipes I make again and again. We eat them fresh and hot with lemon wedges, alongside pasta or mashed potatoes, and I always make enough for leftovers because a cold chicken cutlet straight from the fridge is one of my husband’s favorite snacks.

It’s funny how a recipe you didn’t grow up with can become part of your own family’s story. This one started in my mother-in-law’s kitchen, and this is the version that has become a staple in ours.

These crispy Italian chicken cutlets are thin, golden, and full of flavor, with a crunchy coating of Italian breadcrumbs, panko, Parmigiano Reggiano, and fresh lemon zest. They’re perfect for an easy family dinner and just as good reheated the next day.  ♥ 

Crispy Italian Chicken Cutlets

Ingredients

  • 4 boneless, skinless chicken breasts, sliced horizontally into 8 cutlets and pounded thin
  • 1 cup all-purpose flour, plus more as needed
  • 2–3 large eggs
  • 1 cup Italian-seasoned breadcrumbs, plus more as needed
  • 1 cup Italian-seasoned panko breadcrumbs, plus more as needed
  • 1 cup shredded Parmigiano Reggiano
  • Zest of 1 lemon
  • 1 lemon, divided: ½ juiced and ½ cut into wedges
  • Salt and ground black pepper, to taste
  • Canola or other neutral oil, for shallow frying

Directions

  1. Slice each chicken breast horizontally into 2 thin cutlets. Place the chicken between sheets of parchment paper or plastic wrap and pound to an even thickness, about ¼ inch.
  2. Prepare three shallow bowls for dredging. In the first bowl, season the flour with salt and black pepper. In the second, whisk the eggs with the lemon juice, salt, and black pepper. In the third, combine the Italian breadcrumbs, panko breadcrumbs, Parmigiano Reggiano, and lemon zest. Season lightly with salt and black pepper.
  3. Pat the chicken cutlets dry with paper towels. Dredge each cutlet in the seasoned flour, shaking off the excess. Dip it into the egg mixture and allow the excess to drip off, then press firmly into the breadcrumb mixture until evenly coated on both sides.
  4. Pour about ½ inch of oil into a large, heavy skillet and heat over medium to medium-high heat. Test the oil with a small pinch of breadcrumbs. They should immediately sizzle and rise to the surface without burning.
  5. Working in batches, carefully add the cutlets to the hot oil without overcrowding the pan. Fry for about 3–4 minutes per side, or until deeply golden brown and the chicken reaches an internal temperature of 165°F.
  6. Transfer the cooked cutlets to a wire rack set over a paper towel-lined baking sheet to drain. Repeat with the remaining cutlets, adjusting the heat as needed to keep the breadcrumbs from burning.
  7. Serve hot with fresh lemon wedges, if desired.

Jesse’s Kitchen Tip

Press the breadcrumb mixture firmly onto the chicken for an even coating, and don’t overcrowd the pan. Giving each cutlet enough space helps the coating stay crisp and golden.

Serving Suggestions

These chicken cutlets are delicious served with:

  • Penne with marinara sauce
  • Mashed potatoes
  • A simple green salad
  • Sautéed broccoli rabe

They also make great chicken Parmesan or chicken cutlet sandwiches the next day.

Storage & Reheating

Store leftover chicken cutlets in an airtight container in the refrigerator for up to 3–4 days. Place parchment paper between the layers to help keep the breading crisp.

For longer storage, freeze cooked cutlets for up to 2 months. Thaw them overnight in the refrigerator or reheat them directly from frozen.

For the best results, reheat the cutlets in a 375°F oven or air fryer until hot and crispy. Avoid the microwave when possible, since it can soften the breading.

Variations

  • Add garlic powder or Italian seasoning to the breadcrumb mixture.
  • Add red pepper flakes for a spicy kick.
  • Swap Parmigiano Reggiano for Pecorino Romano for a sharper flavor.
  • Use leftover cutlets to make chicken Parmesan or chicken cutlet sandwiches.

Suitable for 12+ months.

Cut the chicken into small, bite-sized pieces and make sure it is fully cooked and tender. Remove any overly hard or crispy breading and reduce the added salt in the baby’s portion.

RDH Tip

Crunchy breading can stick between teeth. Rinse with water after eating and floss daily to help remove trapped food and keep gums healthy.
