CHILI CRUNCH CITRUS SALMON

Salmon has become a staple in our house, and I make it almost every week. One of the biggest reasons is that my 8-month-old absolutely loves it. Watching him enjoy foods that we already love as a family has made me even more excited to find new ways to cook simple ingredients and turn them into meals everyone looks forward to.

I also love salmon because it’s so easy and versatile. You can keep it simple, make it sweet, spicy, citrusy, or savory, and serve it with almost anything. Rice, vegetables, salad, potatoes—salmon is one of those proteins that makes an easy dinner feel like a complete meal without requiring hours in the kitchen.

This Chili Crunch Citrus Salmon came together from flavors I already love cooking with. The marinade is savory and spicy with soy sauce, chili crunch, garlic, and Calabrian chili peppers, while fresh lemon, lime, and lemongrass add brightness. A little mayonnaise and Dijon help everything coat the salmon and create a flavorful finish as it cooks.

For this version, I set aside my son’s piece before seasoning and marinating, then prepare his salmon separately. The rest gets coated in the full marinade and cooked over fresh slices of lemon and lime. I love this method because it adds another layer of citrus flavor and makes the whole dish feel special, even though the actual preparation is incredibly easy.

I usually serve ours with fried rice and fresh avocado slices. The spicy, citrusy salmon with savory rice and cool, creamy avocado is one of my favorite combinations. But that’s another reason salmon stays in our weekly rotation—it can go with whatever we already have in the kitchen.

This is the kind of dinner I love most: easy enough for a weeknight, full of bold flavor, and adaptable for our whole family. It proves that a meal doesn’t have to be complicated to become one you make again and again. ♥

Chili Crunch Citrus Salmon

Prep Time: 10 minutes | Cook Time: 20 minutes | Total Time: 30 minutes | Servings: 2

Ingredients

  • 3 skinless salmon fillets, about 6 oz each
  • 1 tbsp mayonnaise
  • ½ tbsp Dijon mustard
  • 1 tsp lemongrass paste
  • 2 tbsp soy sauce
  • 1 tbsp chili crunch
  • 1 tbsp Calabrian chili peppers, or to taste
  • 1 garlic clove, finely grated
  • 1 lemon, divided
  • 1 lime, divided
  • Olive oil, as needed
  • Salt and black pepper, to taste

Directions

  1. Preheat the air fryer. Preheat the air fryer to 400°F. Lightly oil or spray a foil-lined air fryer tray or basket.
  2. Marinate the salmon. Place the salmon fillets in a bowl. Add the mayonnaise, Dijon mustard, lemongrass paste, soy sauce, chili crunch, Calabrian chili peppers, grated garlic, and the juice of ½ lemon and ½ lime. Season lightly with salt and black pepper, then gently coat the salmon evenly. Let marinate for about 5 minutes.
  3. Prepare the citrus. Slice the remaining lemon and lime halves. Arrange the slices on the prepared air fryer tray and place the salmon fillets directly on top.
  4. Add the marinade. Spoon the remaining marinade from the bowl evenly over each salmon fillet, then drizzle lightly with olive oil.
  5. Air fry the salmon. Air fry at 400°F for 15–20 minutes, depending on the thickness of the fillets, until the salmon flakes easily with a fork and is cooked through.
  6. Finish. Squeeze fresh lemon juice over the salmon just before serving.

Jesse’s Kitchen Tip

Let the salmon sit in the marinade for 5 minutes to absorb the flavors. Cooking it over fresh lemon and lime slices adds citrus flavor and helps prevent sticking.

Serving Suggestions

♥ Fried rice
♥ Fresh avocado slices
♥ Cucumber salad
♥ Steamed jasmine rice
♥ Chilled Moscato

Storage

Refrigerator: Store leftover salmon in an airtight container in the refrigerator for up to 3 days.

Freezer: For best texture, enjoy fresh or refrigerated rather than frozen.

Reheating

Reheat gently in the air fryer at 350°F for 3–5 minutes, or until warmed through. Avoid overheating, as salmon can dry out quickly.

Variations

♥ Swap the chili crunch for sriracha for a smoother heat.
♥ Add a drizzle of honey for a sweet-and-spicy finish.
♥ Reduce or omit the Calabrian chili peppers for a milder version.
♥ Add sliced scallions or sesame seeds before serving.
