CHICKEN GUMBO
I’ve always loved making soups and stews. There’s something about putting a pot on the stove, letting everything cook slowly, and ending up with a meal that is warm, hearty, and filling. This chicken gumbo has become one of those meals that we genuinely look forward to in our house.
For me, the best comfort-food dinners are the ones that feel like a complete meal in one bowl. This gumbo has tender shredded chicken, smoky andouille sausage, potatoes, vegetables, and a rich broth served over warm white rice. It’s hearty enough to fill everyone up, but it’s also the kind of meal you keep going back to the pot for just one more spoonful.
One of my favorite parts of making it is how the flavor builds as it cooks. Browning the sausage and chicken first, taking the time to make the roux, and then letting everything simmer together turns simple ingredients into something rich and comforting. I love recipes that reward a little patience, and this is definitely one of them.
This isn’t a quick weeknight dinner, but that’s part of why I love it. It’s the kind of recipe I make when I’m in the mood to cook, spend some time in the kitchen, and make something that will leave everyone full and happy. And like most soups and stews, I think it’s even better the next day once all those flavors have had even more time to come together.

This hearty chicken gumbo is made with tender chicken thighs, smoky andouille sausage, potatoes, vegetables, and a rich homemade roux. Served over warm white rice, it’s a comforting, filling dinner that’s perfect for slow weekends, cozy nights, and making ahead for later. ♥
Chicken Gumbo
Ingredients
- 4 boneless, skinless chicken thighs
- 7 oz andouille sausage
- Chicken stock, enough to cover chicken, plus more as needed
- 2 tbsp neutral oil, plus more for searing
- 2 tbsp butter
- 4 tbsp all-purpose flour
- ½ red onion, finely chopped
- ½ green bell pepper, finely chopped
- 4 celery stalks, finely chopped
- 1 large russet potato, cubed
- 3 garlic cloves, minced
- 1 tbsp Worcestershire sauce
- 1½ tbsp Old Bay seasoning
- 2 tsp cayenne pepper, or to taste
- 3 bay leaves
- 4 sprigs fresh thyme
- Handful of fresh cilantro, chopped
- 1 lemon, divided
- Salt and ground black pepper
Directions
- Heat the neutral oil in a large, heavy-bottomed pot over medium heat. Add the andouille sausage and sear until browned. Transfer to a plate and set aside.
- Season the chicken thighs with salt and black pepper. In the same pot, sear over medium heat until golden brown on both sides. Transfer to the plate with the sausage.
- Reduce the heat to low. Add the butter and 2 tablespoons of neutral oil. Once hot, sprinkle in the flour and stir continuously, scraping up the browned bits. Cook the roux until it reaches a deep golden-brown color.
- Add the onion, celery, and green bell pepper. Sauté for 1–2 minutes. Add the potato, garlic, thyme, bay leaves, Old Bay, and cayenne pepper. Cook for another 2–3 minutes, stirring frequently.
- Add the Worcestershire sauce, scraping up any remaining browned bits. Add enough chicken stock to cover the vegetables and stir until the roux is fully incorporated.
- Return the chicken and sausage to the pot. Add more stock as needed to cover the chicken. Simmer over medium-low heat for 1–1½ hours, stirring occasionally. Add more stock if the gumbo becomes too thick. The liquid should lightly coat the back of a spoon.
- Remove the chicken, shred it with two forks, and return it to the pot. Taste and adjust the seasoning. Stir in the lemon juice and cilantro, then simmer for another 5–10 minutes.
- Ladle over plain white rice. Serve with sliced English cucumber dressed with lemon juice and salt for a cool, refreshing side.

Take your time with the roux. Cook it slowly over low heat, stirring constantly and scraping up the browned bits, until it reaches a deep golden-brown color. The roux is what gives the gumbo its rich flavor and body.
Serving Suggestions
This chicken gumbo is delicious served with:
- Plain white rice
- Lemon and salt-dressed cucumber
- Crusty French bread
- A simple green salad
The cool cucumber side is one of my favorite ways to balance the warm, rich, and spicy flavors of the gumbo.
Storage & Reheating
Store leftover gumbo in an airtight container in the refrigerator for up to 3–4 days. Keep the rice separate for the best texture.
For longer storage, freeze the gumbo without the rice for up to 3 months. Thaw it overnight in the refrigerator before reheating.
Reheat gently on the stovetop over medium-low heat, stirring occasionally, until hot throughout. If the gumbo becomes too thick, add a splash of chicken stock. Reheat the rice separately.
Variations
- Add shrimp or crawfish during the last few minutes of cooking.
- Add okra for extra flavor and texture.
- Add more cayenne pepper for extra heat.
- Stir in filé powder at the end for extra depth and a slightly thicker texture.
Baby-Friendly Notes
Suitable for 12+ months.
Shred the chicken into small, soft pieces and serve with soft potato and rice. Set aside the baby’s portion before adding extra cayenne pepper and reduce the added salt in the baby’s portion.
RDH Tip
Gumbo and rice can leave starchy food particles between teeth. Drink water with your meal and floss daily to help remove trapped food and support healthy gums.
